Start by turning on your oven on the default setting at 200° Celsius.
Since the preparation time for the chicken is quite short, by the time you are done, the oven will be hot enough to start baking your chicken.
Now lets get started!
To make the dipping sauce, add the mayonaise, sweet chili sauce, hot sauce, and honey into a small bowl. Mix and set aside.
For the panko to stick to the chicken we need to prepare our egg and spice batter to coat it in. First crack your eggs into a regular bowl. Add a fair amount of salt and pepper and whisk the eggs until they are thoroughly combined.
Now, while you are whisking, add the hot sauce, flour, and spices and mix thoroughly and make sure there are no lumps in the batter. You can always add more spice if you want it spicier.
Now we have a flavourful spicy batter for our chicken!
Cut the chicken breast in long thin pieces of just under a centimeter thick. Pat them dry on both sides with a paper towel. Prepare one plate with a small amount flour and another plate with enough panko to coat the chicken.
Now we are ready to coat our chicken pieces one by one.
Take a piece, coat it in flour, then coat it in the batter and let any excess batter drip off the chicken. Then place the chicken on the plate with panko. Make sure to get panko all around the chicken and don't forget the sides.
When it's fully coated place it on your oven baking rack. Do this for every piece of chicken.
When you've coated every piece of chicken place it in the middle of your oven for 30 minutes.
After 10 minutes in the oven flip all the pieces and wait 10 more minutes before flipping again. Once you've flipped the chicken two times and both sides are cooked, turn on the top grill in your oven and flip every 5 minutes to brown both sides of the chicken.
When the chicken is golden brown and crispy, it's done!
My favourite side dish for this chicken is a fresh salad and some potatoes or fries.
